New Year!

Things have finally started to calm down post holiday season for me. I was lucky enough to travel home for the holidays. It was so nice to be able to see my family and friends.  I sure do miss my mom’s cooking!
Often people start new diets in the New Year, myself included. I have started to really try and eat all the fruits and veggies I am supposed to, mainly by increasing my salad intake (thank you Salad Loop, a wonderful West Coast chain).  I am feeling really great, I have increased energy and look healthier too. Hopefully I can keep it up!
Have you ever seen the website Foodtube? Like Youtube, but for cooking videos. It’s pretty fun and helpful.
Here’s a recipe for my favorite salad to make
CHRISTIE’S CRAZY SALAD

  • Spinach
  • Spring Mix
  • Marinated Tofu
  • Hot peppers
  • Cottage Cheese
  • Green Onions
  • Pineapple
  • Kiwi
  • Beets (lots and lots)
  • Boiled Egg
  • Hot Sauce
  • Sesame Miso dressing

I generally mash it all together….. Weird, but sooo delicious.
